Skillet Fresh Peach Cobbler

This cobbler made from fresh peaches is the taste of summer!
Prep Time: 30 minutes
Cook Time: 45 minutes
Serves: 8-12
Ingredients
For the peach filling:
8 fresh peaches, peeled & sliced
½ cup granulated sugar
¼ cup light brown sugar, packed
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 Tablespoon fresh squeezed lemon juice
2 teaspoons cornstarch
1 teaspoon vanilla extract
For the cobbler batter:
1 1/3 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 3/4 teaspoons baking powder
1/2 teaspoon salt
8 Tablespoons unsalted butter, chilled and cut into cubes (1 sticks)
1/3 cup boiling water
Instructions:
- preheat the oven to 350 degrees. Allow your 12" cast iron skillet to warm in the oven.
- Prepare the peach filling. Mix all ingredients into a large mixing bowl. Allow it to sit for 10 minutes to produce juices.
- While the peaches sit, hand mix together all ingredients for the cobbler batter in a separate mixing bowl. The butter does not need to be fully mixed in, just mix until it all comes together.
- Transfer the peaches mixture into a greased skillet. Dollop the batter onto the top of the peaches. Do not mix.
- Bake for 45 minutes until the crust is golden brown. Serve warm with vanilla ice cream.
