Chicken & Dumplings

The perfect comfort food for when you're sick!

Serves: 4-6
Ingredients:
- 3 tbsp butter
- 4 celery ribs, chopped
- 2 carrots, chooped
- half an onion, chopped
- half of a rotisserie chicken, pulled
- 48oz chicken broth, seasoned to taste***
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/4 cup milk
- 3/4 cup sour cream
- 3 tbsp butter melted
Instructions
- In a heavy pot, melt 3tbsp butter and add in celery, carrot, and onion to soften
- Prepare biscuit mix while vegetables cook. Combine flour, baking powder, baking soda, salt, milk, sour cream, remainder of butter and garlic powder with a fork or with hands just until it all sticks together.
- Add chicken broth and rotisserie chicken to the pot. Bring to soft boil, then bring down to simmer.
- Form small balls of dough by squeezing chunks together with your hands, and drop into pot. Cover with lid and allow to steam for 15 minutes, then enjoy!
***I used homemade chicken broth, so it was already seasoned. You can add in garlic powder, onion powder, parsley, salt, pepper, etc. to your liking.
