Skillet Fresh Peach Cobbler

Ingredients

For the peach filling:

  • 8 fresh peaches, peeled & sliced
  • ½ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 Tablespoon fresh squeezed lemon juice
  • 2 teaspoons cornstarch
  • 1 teaspoon vanilla extract 

For the cobbler batter:

  • 1 1/3 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 3/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 8 Tablespoons unsalted butter, chilled and cut into cubes (1 sticks)
  • 1/3 cup boiling water

 

Instructions:

  1. preheat the oven to 350 degrees. Allow your 12" cast iron skillet to warm in the oven. 
  2. Prepare the peach filling. Mix all ingredients into a large mixing bowl. Allow it to sit for 10 minutes to produce juices. 
  3. While the peaches sit, hand mix together all ingredients for the cobbler batter in a separate mixing bowl. The butter does not need to be fully mixed in, just mix until it all comes together.
  4. Transfer the peaches mixture into a greased skillet. Dollop the batter onto the top of the peaches. Do not mix.
  5. Bake for 45 minutes until the crust is golden brown. Serve warm with vanilla ice cream.
